Alfredo Tofu Pasta Sauce

1 12 oz. package soft tofu

2 C unsweetened soy milk

2 garlic cloves

1 1/2 tbsp olive oil

4 tbsp non-dairy Parmesan cheese

1–2 tsp salt

1 tsp onion powder

1 tsp dried basil

1 tbsp dried parsley

Saute crushed garlic in olive oil. Mix with all ingredients and blend until smooth. Cook and drain 1 lb. pasta of your choice. Pour sauce over drained pasta and serve.

(Optional: Steam vegetables, such as broccoli, carrots, or zucchini and add to pasta and sauce.)

Fruit Shake

1 C Soy or other milk; or juice of your choice

1 C frozen fruit: strawberries, raspberries, blueberries, peaches, and/or pineapple

1 banana (extra good if the banana has been frozen)

Dates or honey to sweeten to taste

1 tsp Vanilla, if desired

Blend juice (or milk) with frozen fruit and banana. Add more liquid to desired thickness. Sweeten if desired.
